Good video on espresso basics! A more classic Italian cappuccino are strictly meant to be 5 oz with more foam so the espresso mixes more evenly with the foam. However, Americans tend to prefer a more foamy latte which is what is shown in the video for cappuccinos.

Im a barista and we brew PT’s Flying Monkey as a medium dark roast!! We also use the Brazil Terra Alta by PT’s for espresso which is a lighter roast. I’m so excited that there’s finally a video that does espresso right. Everyone’s grind will also be different depending on the force they put on their shots (plus pulling shots by hand beats anything Starbucks could ever give you)

I'm pretty sure it depends on country/region and maybe even barista how exactly coffee beverages are made. So no shame on you, babish!! But here's how I learned em/some funfacts: Romano: this one's great for headaches!! Americano: yup, espresso with water, single or double literally just depends on preference. Some baristas let more water run through the filter instead of adding it after. About the milk: if you want more steamed milk, pour quickly. If you want foam, pour slowly. Capuccino: I made with a single shot in a small standard european coffee house cup (around 200ml, an American measuring cup is 240ml for reference) and more foamy than steamy milk Latte: I learned that there's no "latte". Latte means milk, so there's that. A latte macchiato however is a tall 250ml (330ml) glass with more steam than foam and a single (double) shot of espresso poured into it. The brown spot is the "macchiato", spotted milk. Cafe mocha: oh boy, that's Very different in America than in Europe. ;) "Mokka" is a turkish or greek way of preparing a strong, small coffee that tastes very chocolaty. A "caffè mocha", to my knowledge, is a hot chocolate (not the fancy whole chocolate stuff, just good quality dutch cocoa powder mixed with steamed milk) with a shot of espresso poured into it. If you use pure cocoa, it's not even sweet. Cortado: made it the same way Espresso macciato: filled an espresso cup with foam, poured the single shot into it. Affogato: is usually served "disassembled" and makes you feel like an alchemist. ;)

The "caramel macchiato" is the latte-with-caramel-sauce-on-top situation, but you can for sure get a macchiato at Starbucks. The quality of milk and espresso may not be up to par with the exacting standards of Babish's fans, but it's there.

None of these recipes requires a double shot of espresso. Espresso contains a shitload of caffeine. These "double shots" will just cause stomach ache. Double espresso's Cappuccino is just an abomination.
